1) wrong: a food truck means lower overhead, but it doesn't mean you don't want stability

The relevance is just changing, not disappearing. I think it has more to do with general shifts in media. I'll still come here and other sources as often as Yelp, 285 foodies and my opinionated friends, just like I'll still listen to Ebert's take on movies.

MalcolmXmas: It's considered higher grade now thanks to the industrialization of beef - cows didn't involve to eat the grains that they're fed in mass-production, so they have to be injected with tons more antibiotics to simply survive in productive numbers, and even still have health problems. Some people have developed a fondness for the particular flavor of grass-fed, if only because it's different than what they grew up on for the most part. This isn't to preach that you should end up liking it yourself, just why some people might, and in the ~by definition~ subjective view of ~taste~, it's really up to the individual to decide if it's a plus or minus.
It doesn't mean ignorance, just because insults come cheaply on the internets.
