Andres Loaiza is not a maitre d'. He is the General Manager of a wonderful establishment that because of its small size, gives him the opportunity to focus his attention to multiple areas of the restaurant.

The largest bullfighting ring in the world is in Mexico City. Nonetheless, anyone making such a reference clearly does not understand the culture of Mexico. The "I am guessing you are Catholic, yes?” comment is a clear stereotype based on the writer's assumptions of the spanish speaking world.
"Mexican components", droping the f bomb, "a Mexican pastry (I can never remember the names of this sort of stuff)..."
Some of those comments make you sound like a condescending dbag racist.
And by the way, the bullfighting reference would be more appropriate in a Spanish restaurant, as in from the country of Spain.
