Those of us with celiac kids know this isn't just a trend, it's an autoimmune disorder and we don't order GF for our children just to challenge and/or inconvenience the chef. Gluten is poison to celiacs, and a GOOD chef doesn't want to poison his customers. And, for those of us who hate cilantro, maybe customers tell you they are allergic because you are uncaring and insensitive about people's needs. Probably it's the only way to get what they order - no cilantro, or no onions.
