Vietnamese cuisine is showing signs of at long-last making inroads into Atlanta's mainstream dining scene. Problem is that most of these newcomers seriously compromise the authenticity of a cuisine whose elegant blend of French and Asian needs nothing altered to be appealing. So we remain completely loyal to Suzanne Bojtchewsky's BIEN THUY. The author of a couple of cookbooks, Suzanne often prepares off-the-menu dishes, so always inquire if the kitchen has anything special. If not, content yourself with the best noodle and pho dishes in town, rice-flour pancakes stuffed with seafood, lemongrass chicken, pork cooked in a hot pot and to-die-for spring rolls served with a mound of lettuce and herbs in which to wrap them.
