Biscuits

Flying Biscuit

The Biscuit has become Atlanta's ubiquitous choice for a biscuit fix. The whole wheat version has its own cult following. But the secret behind these biscuits may just be the cranberry-apple butter, provided on every table for copious slathering. 1655 McLendon Ave., 404-687-8888; 1001 Piedmont Ave., 404-874-8887. www.flyingbiscuit.com.

Java Jive

Flaky rather than fluffy, Java Jive's biscuits evoke a maternal Americana. You want butter and grape or strawberry jelly with these babies, and that's exactly what you get. They nicely complement the excellent scrambles here, or make for ideal carb-loading paired with delicate gingerbread waffles, a weekend special. 790 Ponce de Leon Ave. 404-876-6161.

Mammy's Kitchen

Nearly all the customers here are regulars, and the only available seating is at the counter facing the griddle. Mammy's has been serving biscuits and gravy for 25 years. You may also order biscuits a la carte, with salmon patties, country sausage patties, bacon or country ham. Mammy's biscuits are flaky and light with a touch of buttermilk. 968 Memorial Drive. 404-525-9110.

Pastries-a-Go-Go

It's hard to look Bob Light's enormous, fluffy biscuit in the eye and say no, especially when it's stuffed with homemade sausage, egg and cheese. Powdery, buttery, airy and rapturously delicious, the biscuits get eaten up early on weekends, and with good reason. 235 Ponce de Leon Place, Decatur. 404-373-3423.

Swallow at the Hollow

Like most everything at this savvy barbecue joint, the biscuits are oversized. They're great for dunking in Brunswick stew and scooping up bits of chopped pork. Drizzled with honey from the squeeze bottle, they also pitch-hit as a simple, satisfying dessert. 1072 Green St., Roswell. 678-352-1975. www.swallowatthehollow.com.
