Kevin Gillespie, of Bravo's "Top Chef" fame, is hard at work in the kitchen and it shows. His simple, deep understanding of salt and acid -- paired with the beautiful ingredients and thoughtful presentations -- makes for some of the most gratifying high-end food in town. Gillespie's ingenious twists on dishes work well because the basics are already perfected: the filleted quail, creamed Brussels sprouts and sunchokes are fresh, musky and comforting; the sweetness of the pear nestled inside the dish is an unexpected delight. The restaurant is often packed, but the comfortable banquettes are spaced well and the room is suited to large crowds without feeling crammed. Most importantly, the success of the restaurant is due not just to the inevitable fame of a reality television contestant, but to a chef with outstanding talent.
