Atlanta's most migratory and eccentric chef, Richard Blais, has landed at Elevation Chophouse, presumably with his tank of liquid nitrogen, as a consultant or chef ... or something. I received this kind of haiku-esque e-mail recently:

Blais will introduce 7 new dishes for 2008...at Elevation as he unveils the "Kitchen Counter" menu
The counter seats 4-5 comfortably and available dates are December 28-31. Reservations must be made in advance and for the entire table only.
The cost is $175 per person without alcohol. Blais will be personally cooking and serving.

I miss Element, it was cool. Any owner cool enough to let your dog sit next to your table AND bring her a bowl of water is okay with me. Plus the food was cool...... get it? cool? cool owner? cool food? Liquid Nitrogen... haha I crack me up
the menu is a combo from one midtown kitchen and element- but not the best from both unfortunately. it may last a while since kennesaw desperately needs a non-chain restaurant with some contemporary food but i would venture to guess blais will sketch off again leaving his chef underlings and staff with no notice for more strange projects and mysterious cooking shows in new zealand. enjoy the liquid nitrogen frozen coke particles on top of vanilla pudding while it lasts.
