I happened to run into one of Cappello's partners in the restaurant last week and he said there's a pretty constant discussion of how far Cappello should go with his menu. Thus far, it's been less kinky than his famously inventive food at Mix. Perhaps he needs to keep it a bit more conventional to attract Grant Park diners, but it still includes occasional flashes of compelling oddity.
