Scott Serpas opening a new restaurant

Scott Serpas is the latest to announce plans to set up shop in the Old Foruth Ward. His eponymous restaurant, Serpas, will open at the The Pavillion at Studioplex (659 Auburn Ave.) in mid-January.

Serpas' resume from The Reynolds Group:

Though he has been established as an Atlanta favorite for years, Scott Serpas made his kitchen debut at prominent New Orleans restaurants, including Mr. B’s Bistro, Le Meridien Hotel and Mike’s on the Avenue. He has also worked with Chef Kevin Rathbun at the popular Baby Routh’s in Dallas, was sous chef at NAVA in Buckhead and was executive chef at Sia’s in Alpharetta and Mitra in Midtown. In 2004, he partnered with restaurateur Bob Amick and Todd Rushing to open the wildly successful TWO Urban Licks, where he was at the helm of the kitchen until October 2007.

Serpas is calling his new restaurant's cuisine "true food":

"True food" emphasizes how American cuisine has become a melting pot of flavors and heritage. The menu encompasses Louisiana roots with Asian and Southwestern accents. Keeping each dish true to its origin is key to the success of Serpas....

Unique plates will include various appetizers such as oyster stew with leeks, celery, bacon, poblano and smoked ham; white bean salad with collards and citrus creole mustard dressing; stuffed artichoke petals with seasoned bread crumbs, olive oil, parmesan and roasted garlic. Entrees will include: shrimp andouille croquettes with mango sour rum and queso cotija, sage- pork-stuffed mushrooms with parsley oil and lemon; and braised short ribs with cast-iron potato and horseradish cottage cheese. Desserts will include lemon-rhubarb cake with coriander cream, and chocolate toffee cake.

"true foods" doesnt that mean another FUSHION place. Here to Serve restaurant do that pretty well.

wow!just another whiney foodie. here's an idea. how about the people that have nothing to do but whine about the food, actually go make some food of their own.
