The bún dishes provide a refreshing spin on the average lunchtime salad. Chilled rice vermicelli noodles are loaded with your choice of meat (or tofu), shallots, ground peanuts, crunchy shreds of lettuce, fresh herbs and a hacked-up fried spring roll.
