Ullio speaks up about noisy Escorpion

I got this note from Riccardo Ullio in response to my report on my first visit to Escorpion:

I'm glad you enjoyed the food on the most difficult night the kitchen has had since opening. I wanted to address some of the issues.

As far as the noise is concerned, we put in the fabric wall to dampen the sound, but it can only do so much. the inner room is probably the loudest, try to sit next to the windows or in the booths on the right and see if it's better. We went into an existing location this time, so I could not address all the design issues as carefully and completely as would have liked to.

We are also moving the valet to the Peachtree side to see if it will be less congested.

Green hankies mean looking for a john huh? that sounds about right for some of the servers ; ). We were actually going for a latino gang kinda look, but it's turned out to be a joke with our gay clientele, so it's all good. Maybe we should let them choose their color?

So far I'm happy with the progress in the kitchen and dining room, considering we've been open two weeks. it's going to be a great place, if a bit loud...Tuesday nights are more quiet.
