White. Truffle. Mayo.

Nothing like a glass full of mayo
Lookout Baconnaise, there's a new kid in town. The town of Insane Mayonnaise, that is. Yesterday I tasted the White Truffle Mayonnaise from Da Rosario (they also have a Black Truffle version). It's 100% organic, so it's 100% healthy, right? Well, maybe not, but it is delicious, and decadent. Especially when you dunk a cube of gruyere cheese into it, which is the way Da Rosario and local chef Eli Kirshstein chose to sample it to thousands of people at a local trade show yesterday. Cheese dipped in mayo! Who knew!?

This is an olive oil-based mayonnaise, and Da Rosario makes a point of sharing that it is made with white truffle "EVOO concentrate" including "real, organic white truffle pieces you can actually see." The bits of real truffle are a nice reassurance that this is not just an artificially flavored truffle concoction, as many truffle olive oils are, so I don't mind the marketing hyperbole.

The truffle mayo is available at trufflelove.blogspot.com and should be hitting select local shelves soon. It comes in a 2.5oz container that must be kept refrigerated, and has an 8-month shelf life, but once you open this, it is sure to go quickly.
