Ignorance is bliss.
Food Network's new show, Health Inspectors will definitely test our belief in the saying. Set to premiere on Friday, Oct. 26, at 10:30 p.m. the new show will take viewers to "the country's filthiest restaurants, expose its grossness and then try to clean it up to an acceptably un-nauseating level."
Accompanying viewers along for the ride will be restaurant consultant and Atlanta native, Ben Vaughn. Vaughn hails from the Ft. Lauderdale Art Institute where he honed his culinary skills. Afterwards, Vaughn went on to become partner and chef at River Oaks restaurants and opened up two of his own restaurants, Grace and Au Fond Farmtable in Memphis, TN. Later on in his career, Vaughn transitioned from chef to consultant.
In the midst of a hectic schedule that accompanies an upcoming season premiere, Ben Vaughn was able to stow away a couple of minutes for an interview:
How has your view of health inspections shifted throughout your career?
It's always been important. It's an important aspect of doing business. When times are tough and money is tight, sanitation seems to be the first thing to go out the door. There is no excuse for dirty kitchens.
What is the most common health code violation you've encountered?
Dirty kitchen towels sitting on the counter. It is everywhere. You wouldn't believe how many people just leave their towels lying around."
Being a "health inspector," are you still able to enjoy a nice meal out?
Oh definitely. I eat out often. I like to eat at restaurants that are small, undiscovered, hole-in-the-walls.
What tips do you have for people who are eating out and want to make sure that they are dining at a clean, health code abiding restaurant?
Check the restrooms first and look for grimy, yucky, menu covers. If you don’t have time to wipe the menus, you probably don’t have time to clean your kitchen.
What have you found as the most rewarding part of being host of a new television series on a major network?
What I’m really excited for and thankful for is that we have made our home in Atlanta. Being in Atlanta, being able to share the experience with the city, that is really the gem.
I mean we eat shrimp and lobster and crab which are basically sea bugs even…
